Peanut Butter Chocolate Chip Cookies

These cookies are too easy to pass on. I am NOT a baker, but found I needed to do some "comfort baking" during 2020. What's better than a warm cookie? A chocolate peanut butter cooking that is filled with fiber!

This recipe is fool proof and you likely have all the ingredients in your pantry.


1 cup natural peanut butter or almond butter

1 egg

1/2 teaspoon baking soda

1/2 cup maple syrup

1 1/2 teaspoons vanilla

3/4 cup rolled oats

1/2 to 1 cup dark chocolate chips or carob chips (depends on how chocolaty you like them)

Maldon salt

Preheat oven to 350 degrees

Mix all ingredients except salt and chocolate in a stand mixer until well combined. Fold in chocolate.

Bake on parchment-lined baking sheet for 10-12 minutes.

Sprinkle with salt once out of the oven.

Makes approximately 2 dozen cookies.
